It all started seven years ago with a simple question, could a fine-casual restaurant specializing in gourmet burgers get away with adding delicious fried chicken sandwiches to its menu? But not just any regular ol' fried chicken sandwich. These fried chicken sandwiches needed size (a marinated + spanked 6oz breast). They needed to come on a bun that was buttery, soft to the touch, and crave-worthy on its own (local brioche from Lyon Bakery). They needed unique flavor combinations that would push the boundaries of what a fried chicken sandwich could be (think bacon, fried egg, pimento cheese, apple butter + pickle chips). Most importantly, they needed a bit of personality to match that of the person enjoying it (our custom rubs with four different levels of heat
