Jollof is a spiced rice dish, simmered in tomatoes, onions, peppers, seasonings and enjoyed with a good helping of salads, fish, chicken, and meats. Cooking this iconic meal brings back vivid nostalgic childhood memories of my mom and I in the kitchen. Jollof rice is a staple in celebratory social gatherings across West Africa. The meal preparation became part of celebrating important milestones in the community. It also became an experience that captured our memories. This is the same great experience and memories Ghana Jollof is recreating by cooking up authentic childhood tastes. I have served the Prince William County Public School system as a teacher for over a decade introducing new concepts and ideas in the classroom.
